Step 1
Mix butter with salt and spices. Cut out the backbone of the chicken. Uncover the chicken and press it with the palm of your hand at the sternum, smear the butter mixture under the skin and on top.
Step 2
Place the coarsely chopped vegetables on a baking tray greased with olive oil. Season with salt and black pepper.
Step 3
Place the chicken on a rack on the upper level of the oven, and the tray with the vegetables on the lower level. Bake everything at 180 degrees for 1.5 hours. Enjoy
