A dish for vegetarians — flavorful penne pasta with mushrooms, spinach and soft mozzarella

Ingredients


penne pasta 400 g
mushrooms 400 g
chopped tomatoes pelati 400 g
fresh spinach 250 g
soft mozzarella 150 g
vegetable broth 600 ml
onions 100 g
garlic 4 cloves
olive oil 30 ml
TO TASTE:
salt
black pepper

Instructions


Step 1

Fry the chopped onion, garlic and mushrooms in oil.

Step 2

Put in the spinach and fry for another 3-4 minutes.

Step 3

Then add the pelati tomatoes, stock, pasta, salt and spices.

Step 4

Stir. If you are cooking in a pan that cannot be put in the oven, put everything in a mold.

Step 5

Place mozzarella slices on top and bake the pasta at 190 degrees for 25-30 minutes. Bon appetit!
