 
Delicious Italian dessert of shortbread dough with chocolate and walnut filling - bocconotti
| BATTER: | 
| wheat flour 300 g | 
| egg yolks 3 pcs | 
| sugar 90 g | 
| vanilla sugar 10 g | 
| butter (cooled) 130 g | 
| leavening agent 1 tsp. | 
| zest of one lemon | 
| pinch of salt | 
| FILLING: | 
| almond flakes (toasted) 100 g | 
| cocoa 30 g | 
| dark chocolate (72%) 100 g | 
| sugar 80 g | 
| egg white 3 pcs | 
| pinch of salt | 
Step 1
Combine the grated butter with the rest of the ingredients, knead the dough, wrap in clingfilm and place in the refrigerator for at least 1 hour.
Step 2
For the filling, combine the chocolate, flaked almonds, sugar and cocoa in a blender. Whisk until smooth. Whisk the egg whites with a pinch of salt. Combine the two mixtures and mix.
Step 3
Grease the molds with oil and spread a small amount of dough in each of them. Then fill the molds with the filling and cover with the dough.
Step 4
Bake the bocconotti for 20-25 minutes at 180 degrees. Bon appetit!
