Vegetarian tomato soup with crackers

You can make a quick soup from almost anything you have in the house. For example, from tomatoes canned in their own juice.

Ingredients


Tomatoes in their own juice 1 can
Onion 1 pc.
Garlic 1 clove
Olive oil
Basil
Salt
Black pepper
Saltine cracker

Instructions


Step 1

Cut the onions into half rings and fry in olive oil along with the chopped garlic.

Step 2

Add the tomatoes with their juice to the pot with the onions. Pour in a little hot water, salt and pepper.

Step 3

Bring to the boil and simmer for 2-3 minutes.

Step 4

Pour the soup into a blender and blend until smooth, adding a couple of basil leaves.

Step 5

Pour into a plate, garnish with saltine crackers in the shape of fish and basil.
