Vegetarian corn salad with Mediterranean dressing
| canned corn 250 g |
| fresh cucumbers 150 g |
| feta cheese 80 g |
| Greek yogurt 50 g |
| lemon juice 25 ml |
| garlic 1 clove |
| green onion 30 g |
| parsley 20 g |
| olive oil 60 ml |
| salt, black pepper to taste |
Step 1
Dice the cucumber into small cubes, add the corn, chopped green onions and parsley.
Step 2
For the dressing, squeeze garlic into a bowl, add feta, lemon juice, yogurt, salt, black pepper, olive oil, mix and dress the salad. Enjoy.
