Topinambour cream soup with chicken broth and lemon.
Earth pear, or topinambur, is a champion among vegetables in terms of potassium content. It is also high in calcium and fluoride.
Topinambour 0.5 kg |
Butter 1 tbsp. |
Olive oil 2 tbsp. |

Chicken broth 100 ml |

Step 1
Peel the topinambour roots and cut lengthwise into four pieces. In a thick-bottomed pan, melt a piece of butter, add two spoons of olive oil, place the topinambour in a single layer, salt a little, add the juice of half a lemon and cover tightly.
Step 2
Cook for 30-40 minutes on minimum heat so that the root vegetables are stewing and at the same time slowly covered with a golden crust. Check for doneness with a knife: it should go into the flesh without any resistance.
Step 3
Transfer the ready topinambour to a saucepan, grind with a blender, and then slightly dilute with hot chicken broth, slightly warm the soup and pour into plates.
