Bulgur is wheat grains that have been boiled, sun-dried and husked from the bran. Bulgur is rich in vitamins, minerals and fiber. Today we will make bulgur pilaf with green lentils. This dish is often served as a side dish to meat dishes.

Step 1
In order not to lose the valuable nutrients of the lentils, soak them in cold water overnight, adding a little salt. Then drain the water, add boiling water so that it covers the lentils by 2 fingers, and boil until half-cooked.
Step 2
While the lentils are boiling, peel the onion and fry it in butter until golden, add to the onion thinly sliced pepper and tomato paste, fry for another 5 minutes. Add finely chopped tomato, hot water, bulgur, lentils and spices, cover and cook the dish for 20 minutes. Garnish the dish on top with finely chopped parsley. Serve hot.
