This is the food of my summer! I lived in a private house almost all my childhood and of course we had a vegetable garden 😀
I remember how long ago, coming from a long walk in the summer, I used to pluck mikado tomatoes hot from the Odessa sun, chop them coarsely, add onions, salt, pepper and homemade unrefined oil! The tomatoes gave off a lot of juice and usually doused the whole thing with bread. Oh mai gad, this is the food of the gods!
But time marches on and the recipe has improved 😀 so as long as you can find all these ingredients on the shelves, run to the store!

yellow mikado 100 g |
cherry tomatoes 70 g |
red onions 20 g |
grilled zucchini 40 g |
basil 5 g |
Dark Ciabatta dried 40 g |
anchovy 15 g |
pesto 20 g |
olive oil 20 g |
white balsamic vinegar 5 g |
salt, pepper to taste |
Step 1
Cut tomatoes into large chunks, add salt, pepper, pesto, crushed garlic, pesto, balsamic, torn basil, dried ciabatta and mix well to let the tomatoes juice up a bit.
Step 2
Garnish with red onion, grilled zucchini, anchovies and basil.
