In summer, apricots are not only fruit and sweet desserts. We have prepared for you a recipe for a summer salad with apricots, onions, feta and cherry tomatoes. And as a dressing sauce - apricots too! Try it!

Step 1
Remove the pips from the apricots. Put 6 halves in the blender bowl, add a little wine vinegar and olive oil. Blend until smooth. Season to taste with salt and pepper and whisk again.
Step 2
Slice the remaining apricots into wedges. Cut the cherry tomatoes in half. Tear the arugula with your hands into a bowl, add the apricots, tomatoes and thinly sliced onion.
Step 3
Dress with the sauce, mix well and transfer to a plate.
Step 4
Top the salad with crumbled feta.
