Cig köfte is a type of Turkish cutlets that are eaten raw. This is where they get their name from. The word "chig" means "raw" in Turkish

Step 1
Pour 2 cups of boiling water over the bulgur, cover and let stand for 20 minutes.
Step 2
Pour into a wide bowl, add tomato and pepper paste, all necessary seasonings, salt and mix well.
Step 3
Finely chop or grate the peeled onion and garlic, add to the bulgur, mix and drizzle with olive oil.
Step 4
Knead like a dough for a few minutes.
Step 5
Chop the herbs, add to the mince and knead well again.
Step 6
Tear off small pieces of minced meat and squeeze them in your hand, giving the classic chig köfte shape.
Step 7
Place on a plate, previously covered with lettuce leaves.
Chig köfte is served with lemon and pomegranate sauce, which is poured over the cutlets just before consumption. Chig köfte can be eaten wrapped in lettuce or pita bread.
