Pork ribs baked in blackberry and red currant glaze
| pork ribs 1 kg |
| vegetable oil 25 ml |
| dried ground garlic 1 tsp. |
| dried ground onion 1 tsp. |
| salt, black pepper to taste |
| GLAZURE: |
| red currants 80 g |
| blackberries 80 g |
| sugar 50 g |
| red dry wine 120 ml |
| balsamic 20 ml |
| garlic 1 clove |
| thyme 1/2 tsp. |
| sage 1/2 tsp. |
| salt, red pepper to taste |
Step 1
Prepare the glaze. Combine the wine, balsamic, thyme and sage in a saucepan and evaporate half of the liquid. Put the crushed garlic, blackberries, currants, sugar, salt, red pepper in a blender bowl and blend until smooth. Pour the mixture into the saucepan with the wine and double boil.
Step 2
Mix dried garlic and onion, black pepper and salt in a bowl. Brush the cleaned ribs with vegetable oil and rub with the spice mixture.
Step 3
Wrap the ribs in foil and bake for 1.5 hours at 180 degrees.
Step 4
Then unwrap the foil, smear the ribs with berry glaze and bake for another 10-15 minutes at 200 degrees. Bon appetit.
