Mexican quesadillas with vegetables, mushrooms, cheese and herbs

Coarsely grated mozzarella 120 g |
canned red beans 100 g |
mushrooms 100 g |
canned corn 80 g |

green onions 10 g |

Greek yogurt 120 g |
tomatoes 80 g |
garlic 1 clove |
olive oil 15 ml |
lemon juice 15 ml |

Step 1
Finely dice the bell peppers, onions and mushrooms and fry in olive oil. Add beans, corn, salt and spices, fry for another minute. Then add the chopped herbs, stir and remove from the stove.
Step 2
Sprinkle half of each tortilla with a quarter of the cheese, spread half of the filling on top and sprinkle with the remaining cheese. Fold tortillas in half and grill for 2-3 minutes on each side on a dry grill pan.
Step 3
For the sauce, chop the tomato and garlic and mix with the rest of the ingredients.
Step 4
Serve the quesadillas with the sauce. Enjoy.
