 
Tortilla rolls with tender scrambled eggs, ham, cheese and tomatoes that are great for breakfast or as an appetizer
| eggs 3 pcs | 
| tortillas (or pita), 26 cm in diameter 2 pcs. | 
| ham 100 g | 
| tomatoes 80 g | 
| hard cheese (coarsely grated) 80 g | 
| toasted cheddar cheese slices 6 pieces | 
| cream (20%) 50 ml | 
| butter 30 g | 
| green onion 30 g | 
| green basil 15 g | 
| TO TASTE: | 
| salt | 
| black pepper | 
| oregano | 
Step 1
Mix cream with eggs, salt and pepper.
Step 2
Divide all ingredients in half.
Step 3
For each roll, melt butter in a skillet, sprinkle the bottom with hard cheese and let it melt.
Step 4
Pour in the egg mixture, sprinkle with chopped green onions. Place the tortilla on top, fry for a couple minutes.
Step 5
Then turn the tortilla over, overlapping slices of ham and tomato in the center. Season with salt, black pepper and oregano.
Step 6
Top with basil leaves and cheddar cheese. Roll up the roll and place it seam side down. Broil for another minute. Enjoy.
