A classic French dessert Ile flotan (floating island) made of weightless meringue floating in crème anglaise.

Step 1
Prepare the meringues. Beat the whites a little, add 2 tablespoons of powdered sugar, the juice of a lemon, and beat to stiff peaks. Using spoons, shape the meringues and cook them in the milk for 2 minutes on each side. Place the meringues on a paper towel, then place in the refrigerator.
Step 2
Meanwhile, prepare the crème anglaise. Strain the cooled milk. In a saucepan, beat the yolks with the remaining powdered sugar and a pinch of vanilla. Place the saucepan on the stove and, stirring constantly with a whisk, add the milk. Cook the cream, stirring, until thickened. Then allow it to cool completely.
Step 3
Serve the Il flotan dessert with almond flakes, berries and fruit, garnished with a sprig of mint.
