Swiss meringue nests with strawberries and green basil — for sweet tooths
egg whites 4 |
sugar 250 g |
strawberries 300 g |
vanilla sugar 20 g |
zest of 1 lemon |
cornstarch 3 tsp. |
green basil leaves 10 g |
Step 1
Combine the whites, 200 grams of sugar and vanilla sugar. Place on a steam bath and stir until the sugar is completely dissolved. Then beat with a mixer to sharp peaks.
Step 2
Place the meringue in a pastry bag with a rose nozzle. Line a baking tray with parchment and form 8 nests.
Step 3
Dry the meringues in the oven for 2.5-3 hours at 75 degrees. Then allow them to cool.
Step 4
Blend half of the strawberries with the basil leaves in a blender. Add the remaining strawberries, lemon zest, starch and remaining sugar. Bring to a boil. Then allow to cool.
Step 5
Fill the meringue nests with the strawberry filling. Garnish with fresh berries and mint if desired. Enjoy.
