The legendary ballerina Anna Pavlova loved meringue (or simply meringue). You can join her! Let's prepare a meringue roll with sea buckthorn, which is almost calorie-free but incredibly tasty.

Step 1
Simmer the sea buckthorn with sugar (2 tbsp), crushing it well with a spoon.
Step 2
Separate the yolks from the whites. Beat the whites into a stiff foam, add sugar (150 g.) and beat until very thick. We recommend adding a few drops of lemon and almond essence to the meringue in order to fend off the egg odor.
Step 3
Spread the mixture onto a parchment paper-lined baking tray in the shape of a 20x30cm rectangle. Bake the meringue at 170C for 20 minutes. Then - take it out and cool it on a board without removing it from the paper.
Step 4
Put another piece of parchment paper on top and carefully turn the meringue over. Remove the paper on which the roll was baked.
Step 5
Spread the meringue with the sea buckthorn puree. Carefully use the paper to roll up the roll and sprinkle with powdered sugar.
