Step 1
The whites must be carefully separated from the yolks, otherwise it will be difficult to achieve a lush foam. Whisk the six whites in a dry bowl, gradually increasing the speed to maximum. When the whites are lumpy, gradually add the powdered sugar until the whites are firm and glossy. Add the lemon juice and cornstarch and stir with a spatula.
Step 2
Place the future meringues on a baking tray. You can do this with a pastry bag or simply with a spoon, depending on the shape you want to give the meringues.
Step 3
Make dimples in the center of each cake — for the cream. Leave enough space between the meringues; they will get bigger as they bake. Bake the meringues for about an hour and a half at 90-100 degrees.
Step 4
Beat the cream cheese or mascarpone with a mixer with the cream, adding powdered sugar until the cream becomes a smooth paste. Fill meringues with cream and decorate with berries. The cakes can be made larger or smaller, or you can make a whole cake at once.
