Step 1
Boil water in a pot, salt and boil the noodles until tender.
Step 2
Dice the salmon. Heat the olive oil in a frying pan, fry the salmon pieces and add the coconut shavings.
Step 3
Chop the cilantro and finely chop the cucumber. Add the mixed greens and cucumber to the skillet and sauté for 2-3 minutes.
Step 4
Combine everything with the cooked noodles, drizzle with lemon juice and serve immediately!
