beef tripe 0.5 kg |
beef broth 2,5 liters |

Step 1
Pre-soak the tripe in cold water for 10 hours. Then pour clean water over it, bring it to a boil, drain the water and rinse the scar. Repeat the procedure twice. After pour the tripe 1.5 liters of broth, bring to a boil, reduce the temperature to a minimum and stew under a closed lid for 3 hours and 45 minutes. Then drain the broth, shred the tripe, pour the remaining liter of broth and bring to a boil.
Step 2
Meanwhile, fry the chopped celery stalk, carrot and onion in a mixture of vegetable oil and half the butter. Add the tomato paste, chili pepper, nutmeg and stir-fry for a few minutes.
Step 3
Then add the contents of the skillet to the rub. Season with salt, pepper, bay leaf and cook under a lid at minimum temperature for 7 minutes.
Step 4
After a while, sauté the flour in the remaining butter, add it to the soup and simmer for another 2-3 minutes.
Step 5
Then let the soup infuse for 10 minutes. Serve with chopped herbs.
