Baba Ganoush is a popular Middle Eastern and Mediterranean dish with a creamy, slightly smoky flavor. It is usually eaten with pita bread, but other crusty bread flatbreads will work just as well.

Step 1
Eggplants are pre-baked whole (at 180 degrees for about 30 minutes) or roasted over fire or coals, and thus the flesh becomes soft and acquires a grilled flavor.
Step 2
Allow the baked eggplants to cool, then cut them lengthwise and scrape out the flesh with a spoon. If the eggplant skin is soft and tender, you don't need to remove it.
Step 3
Transfer the eggplant flesh to a blender, add the sesame tahini paste, garlic, olive oil, lime or lemon juice and season with spices. Turn it all into a smooth puree.
Step 4
The eggplant appetizer is ready to serve. Place it in a nice sauce pan, sprinkle with paprika or cayenne pepper, drizzle with olive oil and garnish with parsley greens. Enjoy!
