Hummus is a chickpea puree appetizer whose main ingredients are olive oil, garlic, lemon juice and sesame paste. This dish, along with Turkey, is particularly popular in Arab countries and Middle Eastern countries such as Israel, Jordan, Lebanon and Syria. In recent years, hummus has begun to gain popularity in the United States and European countries as a dip served with chips.

Hummus, which can be served either cold or hot, is high in quality vegetable protein, dietary fiber, unsaturated fats and iron.

Ingredients


chickpeas 500 g
warm water 1/2 tbsp.
sesame paste 4 tbsp.
olive oil 4 tbsp.
ground cumin 1 tsp.
lemon juice 4 tbsp.
garlic 3 cloves
salt
basturma (if hummus is cooked hot)

Instructions


Step 1

Let's start preparing this protein and micronutrient-rich appetizer. Boil chickpeas soaked overnight in water and rinsed well in the pressure cooker. The chickpeas should become soft as a result of boiling, so that the skin can be easily peeled off the peas. When the chickpeas are boiled, drain the liquid in which it was boiled, in a separate bowl. It will come in handy for making hummus. Let the chickpeas cool down a bit before moving on to the next step. About 10 minutes will be enough for this.

Step 2

Peel the chickpeas from their skins and put them in a blender and add the other ingredients: sesame paste /tahinna/, olive oil, lemon juice, salt (to taste), cumin, crushed garlic and half a cup of liquid in which the chickpeas were cooked. Blend all ingredients with a blender until smooth. The consistency of hummus should resemble thick sour cream. If the mixture is too thick, add a little more liquid in which the chickpeas were cooked and mix again with a blender. Serve garnished with parsley and coarsely ground red pepper.

Step 3

If desired, hummus can also be prepared as a hot appetizer with basturma. To do this, put hummus in an oven mold. Level the surface, and making a small depression in the middle, put a few slices of basturma in it. Bake in an oven heated to 180 degrees for 10 minutes. Serve hot. Bon appetit!
