Tender pork fillet with spicy cherry salsa
| pork bat (or loin) 0.5 kg |
| vegetable oil 20 ml |
| salt to taste |
| ground black pepper to taste |
| ground coriander to taste |
| FOR SALSA: |
| cherries (pitted) 250 g |
| red onion 50 g |
| cilantro 10 g |
| lime 1 pc |
| olive oil 20 ml |
| chili pepper to taste |
| salt to taste |
| sugar to taste |
Step 1
Season the meat with salt, pepper, coriander and oil. Then place on a hot grill and roast until cooked through. Afterwards, let the meat rest for 5 minutes.
Step 2
Prepare the salsa. Chop and combine the cherries, chili peppers, onion and cilantro in a bowl. Add the lime juice, salt, sugar, and olive oil and stir to combine.
Step 3
Serve the meat with the cherry salsa. Enjoy!
