 
Caprese chicken breast with caramelized cherry tomatoes and pesto sauce.
| chicken breast (250 g each) 2 pieces | 
| pesto sauce 80 g | 
| soft mozzarella cheese 120 g | 
| cherry tomatoes 200 g | 
| green basil 15 g | 
| balsamic syrup 35 ml | 
| balsamic vinegar 10 ml | 
| olive oil 40 ml | 
| TO TASTE: | 
| salt | 
| sugar | 
| black pepper | 
| Italian herbs | 
| oregano | 
| PESTO SAUCE: | 
| basil leaves 50 g | 
| garlic 2 cloves | 
| roasted walnuts 2 cloves | 
| parmesan 50 g | 
| olive oil 100 ml | 
| white wine vinegar 20 ml | 
| salt, white pepper to taste | 
Step 1
Combine all ingredients for the pesto sauce in the bowl of a blender and whisk until smooth.
Step 2
Heat a frying pan with the oil, pour in the sugar and caramelize the cherry tomatoes. Season with balsamic vinegar, salt, black pepper and oregano.
Step 3
Cut the chicken breasts crosswise into two pieces. Season with salt, Italian herbs and black pepper. Fry in oil until browned.
Step 4
Then brush with pesto sauce, top with sliced cheese and fry under a lid for 3-4 minutes.
Step 5
Serve chicken breasts with caramelized tomatoes, pesto sauce, basil and balsamic syrup. Enjoy.
