Fried chicken breast with zucchini relish sauce
chicken breasts (250 g each) 2 pieces |
chicken broth 150 ml |
white dry wine 80 ml |
olive oil 20 ml |
salt to taste |
black pepper to taste |
RELISH SOUCE: |
zucchini 250 g |
onions 120 g |
sweet pepper 150 g |
green chili pepper 1 pc |
apple cider vinegar 300 ml |
sugar 200 g |
cornstarch 1/2 tsp. |
mustard seeds 2 tsp. |
turmeric 1/2 tsp. |
nutmeg 1/3 tsp. |
salt to taste |
Step 1
Prepare the sauce. Finely dice the vegetables. Season with salt and set aside for 10 minutes.
Step 2
Combine the remaining ingredients in a saucepan and bring to the boil.
Step 3
Strain the chopped vegetables from excess moisture, put them in the boiling mixture and simmer for 30 minutes. Then allow the sauce to cool.
Step 4
Season the chicken fillets with salt and pepper and fry in oil until browned. Alternately pour in and evaporate the stock and wine, turning the fillets several times.
Step 5
Serve with the relish sauce. Enjoy.
