water 4 cups |
sugar 3 cups |
citric acid 0.5 tsp. |
orange juice 1.5 cups |
vanilla sugar 5 g |
cornstarch 1 cup |
peeled roasted peanuts 100 g |
apricots 50 g |
seedless dates 50 g |
FOR SPRINKLES: |
coconut 1 tbsp. |
powdered sugar 100 g |
cornstarch 100 g |
Step 1
Prepare the syrup. Combine 3 cups water, sugar, citric acid in a saucepan and boil over medium heat without stirring for 40 minutes.
Step 2
After this time, in a separate saucepan, combine a cup of water, orange juice, starch, vanilla sugar and, stirring constantly with a whisk, boil until thickened. As soon as the mixture thickens, pour the syrup into it and continue to boil for another 5-10 minutes, stirring constantly.
Step 3
Place the halved dried fruits on the bottom of the mold covered with cling film. Fill them with the hot mixture, sprinkle with peanuts and leave to cool for an hour. Then send to the refrigerator for at least another 3 hours.
Step 4
Prepare the sprinkles. Mix together the coconut, powdered sugar and cornstarch. Dust a work surface with the sprinkles and place the hardened loukoum on it. Then use a strainer to spread the sprinkles over the entire surface.
Step 5
Cut the loukoum into any shape and roll each piece in the sprinkles. Serve with tea or coffee, if desired.
