The famous Portuguese dessert - airy baskets of pâtel de nata

Step 1
Dust the table with flour, roll out the dough in the shape of a square to a thickness of 4-5 millimeters. Roll into a tight roll, cut into 12 pieces and place in molds. Cover with foil and place in the refrigerator for 10-15 minutes.
Step 2
For the cream, combine the water and sugar, boil for a couple of minutes. In a saucepan, mix 250 milliliters of milk, lemon zest, cinnamon and salt. Bring to a boil. Dilute 30 grams of flour in the remaining milk and add to the boiling milk. Stir until it thickens. Then rub through a sieve. Pour the sugar syrup into the mixture in a thin stream and stir until smooth. Allow the cream to cool to at least 60 degrees, add the yolks and mix with a mixer.
Step 3
Stretch the dough over the bottom and sides of the molds, fill with cream, not reaching the edges.
Step 4
Bake the cakes at 250 degrees, using the "top-bottom" mode, 10-12 minutes. Bon appetit!
