Salad of baked root vegetables with seafood

Vitamin bomb - baked root vegetable salad with seafood.

Ingredients


carrot 200 g
celery root 200 g
potatoes 200 g
mussels in oil 100 g
sea cocktail in oil 100 g
olive oil 20 ml
zest of 1/2 lemon
salt, black pepper to taste
mixed salad 50 g
DRESSING:
garlic 5 cloves
honey 20 g
olive oil 40 ml
lemon juice 20 ml
salt to taste

Instructions


Step 1

Dice the carrots, celery root and potatoes. Drizzle with oil, season with salt, pepper and lemon zest. Place the garlic next to it and bake at 190 degrees for 10 minutes. Then take out the garlic and bake the rest of the root vegetables for another 15-20 minutes.

Step 2

Prepare the dressing. Grind the baked garlic in a mortar. Combine it with honey, salt, lemon juice and olive oil. Mix thoroughly.

Step 3

Strain the mussels and sea cocktail from the oil. Place the salad mix, roasted root vegetables, seafood on plates and drizzle with the dressing. Enjoy.
