A healthy and hearty ptitiam couscous with green vegetables and hazelnuts.
| couscous ptitiam 200 g |
| garlic 2 cloves |
| zucchini 200 g |
| broccoli florets 150 g |
| sweet pepper 150 g |
| green peas 100 g |
| chopped roasted hazelnuts 70 g |
| honey 25 g |
| wine vinegar 15 ml |
| olive oil 20 ml |
| butter 60 g |
| TO TASTE: |
| fresh chili pepper |
| salt |
| black pepper |
| ground fennel |
Step 1
Boil the couscous in salted water and discard on a sieve.
Step 2
Shred the zucchini, sweet pepper and broccoli and fry in a mixture of olive oil and half the butter until al dente.
Step 3
Add the chopped garlic and chiles, peas, honey, vinegar, salt, black pepper and fennel. Stir-fry for a couple more minutes.
Step 4
Then mix with the couscous, remaining butter and hazelnuts. Enjoy!
