Oriental Tabbouleh salad with couscous and vegetables
| couscous 100 g |
| boiling water 140 ml |
| tomatoes (firm) 3 pcs |
| cucumber (large) 1 pc |
| green onion 25 g |
| red onion 75 g |
| parsley leaves 50 g |
| mint leaves 25 g |
| iceberg lettuce 100 g |
| olive oil 60 ml |
| TO TASTE: |
| salt |
| lemon juice |
| fresh chili pepper |
| ground black pepper |
Step 1
Pour boiling water over the couscous, cover with a lid and leave to cool completely.
Step 2
Dice and combine the cucumber, tomato pulp and core, chili pepper and red onion in a bowl.
Step 3
Add the chopped herbs and shredded lettuce to the vegetables.
Step 4
Stir in the cooled couscous and combine with the vegetables.
Step 5
Season with salt, pepper, olive oil and lemon juice.
Step 6
Stir and serve the tabbouleh garnished with chili pepper slices and parsley.
