Lebanese garlic sauce with egg white, vegetable oil and lemon juice

juice of one lemon |
Step 1
Peel the garlic and whisk together with the salt in a blender. When the garlic turns to mush, add the egg white and whisk well again.
Step 2
Continue to whisk the garlic and gradually pour in the oil in a thin stream.
Step 3
Then, without stopping beating, add lemon juice. Then pour in the oil a little at a time.
Step 4
Alternating oil and lemon juice, beat until the oil and juice are finished. After all the ingredients have been used, beat for a while longer - until the sauce turns into a light and airy cream.
