Easy healthy broccoli and couscous patties with cashew nut sauce
boiled broccoli florets 0.5 kg |
steamed couscous 360 g |

grated mozzarella cheese 120 g |
green onion 20 g |
olive oil 50 ml |

CASHEW SAUCE: |
cashew nuts 120 g |
lemon juice 20 ml |
water 180 ml |
salt, sugar to taste |
Step 1
Pour warm water over the nuts and leave for 7-8 hours.
Step 2
Boil the broccoli florets in salted water for 10 minutes. Then let them cool down and dry them.
Step 3
Pour 180 grams of couscous with steep boiling water in a ratio of 1 to 1 and leave under a lid until completely cooled.
Step 4
Mix the chopped onion with garlic, broccoli and couscous in a blender. Add the yolk, egg, cheese, salt, black pepper, flour and mix well.
Step 5
Form patties and fry them in oil until browned.
Step 6
Combine all the ingredients for the sauce and blend in a blender until smooth.
Step 7
