Hearty zucchini casserole with minced chicken

sweet pepper 250 g |

grated hard cheese 200 g |

sour cream 100 g |

Step 1
Chop the sweet pepper, garlic and onion. Fry in the oil until browned. Add the minced meat and fry for a further 6 minutes. Season with the chimichurri spice mix and salt.
Step 2
For the filling, combine the chopped parsley, eggs, sour cream, salt and black pepper. Stir to combine.
Step 3
Cut zucchini into circles half a centimeter thick. Place half of them in a greased mold and salt a little.
Step 4
Spread all the minced meat on top and sprinkle with half of the cheese.
Step 5
Then lay out the remaining zucchini, fill everything with egg mixture and sprinkle with the remaining cheese.
Step 6
Bake at 180º for 35-40 minutes. Enjoy!
