Omelet-pie with fresh tomato salsa
skinned tomatoes 700 g |

grated soft mozzarella 125 g |
olive oil 40 ml |

Step 1
Cut the tomatoes into small cubes. Add salt, sugar and spices. Pour in the olive oil. Stir.
Step 2
In a separate bowl, combine the eggs and sour cream, salt, black pepper and whisk well.
Step 3
Take a round ceramic mold with a diameter of 24-26 centimeters, grease with olive oil, pour the tomato salsa into it, then spread the egg mixture evenly on top. Sprinkle with grated mozzarella.
Step 4
Bake the omelet cake at 175 degrees for 20-25 minutes. Enjoy!
