| apple cider vinegar 40 ml |
| soy sauce 40 ml |
| cornstarch 1.5 tsp. |
| sesame oil 40 ml |
| ginger root 30 g |
| garlic 2 cloves |

| TO TASTE: |

Step 1
Prepare the sauce. Combine the soy sauce, sugar, vinegar and starch in a bowl and mix thoroughly.
Step 2
Cut the eggplants into slices, salt them liberally, mix and leave them for 20 minutes. Then rinse and pat dry with a paper towel.
Step 3
Slice the sweet peppers, chop the chili and green onions. Grate the garlic and ginger root.
Step 4
Fry the eggplants in oil until lightly browned, stirring constantly. Then add the sweet peppers and fry for a minute.
Step 5
Then add the chili peppers, garlic and ginger, green onions, dried garlic and fry, stirring for a few more seconds. Pour in the sauce and stir until it thickens.
Step 6
Serve hot or cold. Enjoy.
