Step 1
Prepare the matbouha sauce. Heat paprika, zira and turmeric in a pan, then grind in a mortar. Crush garlic and bell pepper and fry in vegetable oil. Then add the chopped chili pepper and fry for a few minutes. Cut the peeled tomatoes into cubes, put them in the pan and stew until they soften and evaporate excess moisture. Add the grated spices, lemon juice, salt, sugar and stir.
Step 2
Then make small funnels in the sauce and beat an egg in each of them. Determine the degree of readiness of the eggs according to your taste. Sprinkle shakshuka with chopped cilantro and serve.
