 
We decided to go a little crazy and make this sweet egg scramble today with cream, agar-agar and canned apricots. And, of course, with black pepper poppy seeds!
Unlike gelatin, agar-agar is made from algae. It only dissolves at temperatures over 90 degrees, but it solidifies very easily after that.
| cream (20%) 150 ml | 
| agar-agar 1 tsp. | 
| sugar 1 tbsp. | 
| canned apricots | 
| cardamom to taste | 
| poppy seeds | 
Step 1
Pour the cream into a saucepan, add the cardamom, sugar and agar-agar crushed with your fingers.
Step 2
Bring to the boil, stirring constantly with a whisk.
Step 3
Carefully pour the cream over a sieve on a silicone mat, so that it takes the form of a few egg whites.
Step 4
Place an apricot half in the center of each egg white. Sprinkle with poppy seeds and let set (this will take a few minutes).
Step 5
Serve as a dessert.
