Mexican Eggs Huevos Rancheros with Salsa

Step 1
Prepare the salsa. Fry the garlic and onion in olive oil. Pour boiling water over the tomatoes for a few minutes, peel them, dice them and send them to the pan. Add the chopped cilantro, chili pepper and beans. Season with salt, stir and simmer the salsa for 5-7 minutes.
Step 2
In parallel, prepare the Huevos rancheros - glazed eggs and reheat the tortillas in the oven.
Step 3
Serve the scrambled eggs on the tortillas with the salsa, chopped cilantro, chili pepper slices and chunks of cheese.
