chicken thighs 800 g |
soy sauce (not concentrated) 150 ml |

Step 1
Combine the soy sauce, vinegar, sugar and peppercorns in a bowl. Stir to dissolve the sugar.
Step 2
Place the chicken thighs skin side down in a dry, hot pan. Pour in the sauce, add the bay leaf and garlic. Cover with a lid, bring to a boil, then reduce the heat and simmer for 20 minutes.
Step 3
Then turn the thighs skin-side up and braise for another 10 minutes. Then remove the lid, increase the temperature and cook the thighs, turning, for another 7-8 minutes.
