French galette with pears, blue cheese, walnuts and honey
SHORTBREAD DOUGH: |
wheat flour 170 g |
softened butter 70 g |
egg 1 egg |
egg yolk 1 egg |
salt a pinch |

FILLING: |
pears (medium hard) 0,5 kg |
blue mold cheese (gorgonzola or dor bleu) 100 g |
thyme 2 sprigs |
FOR SERVING: |
walnuts 30 g |
liquid honey 30 g |
Step 1
Sift the flour, mix in the butter, salt and rub in the crumbs. Beat in the egg, add a little water if necessary and knead the dough. Wrap it in clingfilm and leave to rest in the refrigerator for at least 1 hour.
Step 2
For the filling, peel the pears, cut them into slices about 5 mm thick.
Step 3
Roll out the dough, place the pears on it, sprinkle with thyme leaves and arrange the cheese slices.
Step 4
Pinch the edges of the dough overlapping, transfer the galette with parchment to a baking tray, brush with egg yolk and bake in the oven for 18-20 minutes at 190 degrees Celsius.
Step 5
Pour liquid honey over the finished galette and sprinkle with chopped walnuts. Enjoy!
