SHORTBREAD DOUGH: |
wheat flour 170 g |
melted butter 70 g |

Step 1
Mix the sifted flour with the salt and butter and knead into a crumb. Add the egg, a little water if necessary and knead the dough. Wrap it in clingfilm and put it in the refrigerator for at least 1 hour.
Step 2
Prepare the filling. Coarsely chop the mushrooms and fry on a mixture of vegetable and butter oil until brown. Add chopped garlic, sugar and stir-fry for another 2-3 minutes. Pour in the soy sauce, salt and pepper to taste and stew until the sauce evaporates. Then allow the mushrooms to cool.
Step 3
Roll out the dough to a thickness of 5 millimeters. Place the filling on it, overlap the edges and transfer the galette with parchment to a baking tray. Brush the edges with egg yolk and bake for 12-15 minutes at 190 degrees.
Step 4
