For connoisseurs of true Italian cuisine and meat - pizza Bolognese with Béchamel sauce (pizza with minced meat and mozzarella).

BOLOGNESE SAUCE: |
onions 60 g |
carrots 60 g |
garlic 2 cloves |
ground beef 200 g |
olive oil 30 ml |
red wine 50 ml |
pelati tomatoes 300 g |
water 75 ml |

sugar to taste |
black pepper to taste |
PIZZA DOUGH: |
wheat flour (b/w) 125 g |
olive oil 15 ml |
dry yeast 6 g |
warm water 100 ml |
salt a pinch |
Step 1
Add the rest of the ingredients to the sifted flour and knead the dough. Cover with a towel and leave in a warm place for an hour and a half.
Step 2
Prepare the bolognese sauce. Chop the onion, carrots and garlic and fry in olive oil. Add the minced meat and fry until the liquid evaporates. Then pour in and evaporate the wine. Add the pelati tomato puree, water, sugar, pepper, salt and simmer the sauce for 25-30 minutes. Then allow it to cool slightly.
Step 3
Prepare the Béchamel sauce. Sauté the flour in butter, pour in a thin stream of milk, stirring constantly, add the nutmeg, bring the sauce to the boil, then let it cool slightly.
Step 4
Dust the table with flour, knead the dough to form a pizza crust. Brush with the béchamel and bolognese sauces and sprinkle with grated mozzarella.
Step 5
Bake for 10 minutes at 280℃. Then sprinkle with oregano, smoked paprika and serve. Enjoy.
