Bright Livornese salad with hearty white beans, fresh tomatoes and mussels in oil.

red onion 30 g |
tomatoes 120 g |
rucolla 50 g |
pink wine vinegar 20 ml |
olive oil 40 ml |

Step 1
Rinse the beans in boiling water and blot with a paper towel. Combine with the diced onion and tomatoes. Season with salt and stir.
Step 2
Prepare the dressing. Mix the vinegar, olive oil and sugar. Place arugula, bean, tomato and onion mixture, mussels strained from oil on plates, pour dressing and pepper. Serve the salad with croutons, if desired. Enjoy.
