Wheat flour pancakes on kefir with refreshing lemon curd

LEMON CURD: |
eggs 4 pcs |
yolk 1 pc |
cream (30%) 150 ml |
sugar 150 g |
lemons 350 g |
Step 1
Prepare the curd. Zest and juice the lemons, add the eggs, egg yolk, sugar, cream and mix thoroughly. Put the mixture on a water bath and, stirring, heat until steam appears. Then let the curd cool and strain through a sieve.
Step 2
Prepare the fritters. Mix the eggs with the sugar and salt. Pour in the kefir, mix well and heat on a water bath to 40 degrees. Separately mix sifted flour with baking powder and pour into the warm mixture. Knead into a smooth dough. Add a tablespoon of vegetable oil and mix again.
Step 3
Fry the fritters in vegetable oil until golden. Serve with lemon curd.
