Vienna walnut cake with chocolate frosting. The chocolate glaze can also be made with white chocolate.

FOR THE GLAZE: |

Step 1
Preheat the oven to 180°C.
Step 2
Grind the walnuts into powder, add the baking powder, flour and a pinch of salt, mix everything together.
Step 3
Separate the yolks from the whites. Put the whites in the refrigerator.
Step 4
Prepare the dough: beat 250 g of softened butter with sugar, then, without stopping beating, one by one, introduce the yolks.
Step 5
Pour in the flour and nuts and mix everything in the food processor on slow speed.
Step 6
Beat the cooled egg whites with a pinch of salt, then add the powdered sugar and continue beating until firm and smooth.
Step 7
Stir the protein mixture into the batter.
Step 8
Place the dough in a mold lined with oiled baking paper and bake in the preheated oven for about 40-50 minutes, then pierce with a match — if dry, remove the cake and cool.
Step 9
Prepare the glaze: stirring, melt the chocolate with the remaining butter and cream over low heat. If the glaze is too thick, add more cream.
Step 10
Cut the cake lengthwise into two thin ones. Brush the bottom cake with orange jam, cover the top cake and spread the chocolate glaze evenly over it.
