Cold brewed oolong green tea with peach syrup
COLD BREW OOLONG TEA: |
Four Seasons of Spring oolong tea 8 tsp. |
cold water 1 liter |
PEACH SYRUP: |
peaches (fresh or frozen) 1 kg |
sugar 200 g |
salt a pinch |
Step 1
Pour the oolong tea into a large enough teapot (e.g. a P & T cylindrical teapot) and fill with cold water. Leave to steep in the refrigerator for 6 hours or overnight (can also be steeped for 30 minutes at room temperature). Pour the tea into a carafe and sweeten with peach syrup to taste. The same tea leaves can be re-brewed up to two more times.
Step 2
For the peach syrup: Bring peaches with sugar and salt to a boil in a medium saucepan. Reduce heat and cook further at a low boil. Stir and knead the fruit with a spoon for 40-45 minutes until smooth and tender. Pass through a sieve into a jar with an airtight lid and close. Refrigerate for at least 1 hour. The mixture can be stored in the refrigerator for up to two weeks.
