Step 1
Beat the vegetable-cream mixture and egg yolks with a mixer. Add the flour, powdered sugar and beat again.
Step 2
Separately whisk the egg whites into a foam and incorporate into the batter. Beat with the mixer.
Step 3
Grate the zest of one orange into the waffle batter and mix. Place in the refrigerator for 10 minutes.
Step 4
Place the batter in the waffle iron, close the lid and cook for 4-5 minutes (or according to your waffle iron's instructions).
Step 5
Place the finished waffles on a plate and sprinkle with powdered sugar. Serve with finely chopped apricots.
