The original open pie hails from Lorraine.
One of the peculiarities of quiche is that the filling is put into an already prepared pastry mold, after which the pie is baked once more in the oven.
FOR THE DOUGH: |

Step 1
You can buy ready-made sand dough or make homemade. To do this, mix flour with oil, salt, eggs and water. Knead the dough. Put in the refrigerator for about 30 minutes.
Step 2
After that, roll out the dough evenly. Place in a baking dish, prick with a fork in several places. Fill with dry rice, beans or any other beans. This way the dough will keep its even shape and will not puff up.
Step 3
For the filling, beat eggs with sour cream, cheese, salt and pepper. Put slices of ham and broccoli in the prepared crusts, pour the whipped mixture and bake in the oven for 20 minutes at 175 degrees.
Use your favorite vegetables and herbs for the filling. Seafood and fish are perfect.
