Great Scotch eggs: classic and Italianized

Step 1
Classic Scotch eggs. Add finely chopped onion, garlic, chopped parsley, egg yolk, salt and pepper to the minced meat. Mix thoroughly and beat the mince. Then make tortillas of it the size of the palm of your hand. Put a peeled hard-boiled egg in the center of each flatbread, wrap it with minced meat on all sides, roll it in flour, beaten egg and breadcrumbs. Deep-fry the breaded eggs until cooked through, about 10 minutes.
Step 2
Italian-style Scotch eggs. Crack egg yolks, add dried basil, salt and pepper and mix. Make holes in mozzarella balls, fill them with yolks and spices and bread them in flour, beaten egg and breadcrumbs. Repeat this procedure twice. Then deep-fry for 1-2 minutes.
Step 3
Serve with mixed salad, cherry tomatoes and fresh cucumber.
