Flavorful chicken thighs in a spicy peanut glaze
6 chicken thighs without skin and bones |
3 garlic cloves |
20 ml vegetable oil |
25 ml soy sauce |
25 ml lime juice |
2 tsp. grated ginger |
30 g roasted peanuts |
1 chili pepper |
5 g each of mint and coriander leaves |
10 g green onion |
salt, black pepper, red pepper to taste |
GLAZURE: |
50 g peanut paste |
30 g chili sauce |
30 ml soy sauce |
30 ml wine vinegar |
20 ml vegetable oil |
sugar - to taste |
Step 1
Prepare the marinade. Mix the minced garlic, soy sauce, lime juice, vegetable oil, ginger, black pepper, salt and red pepper.
Step 2

Marinate the meat for 20 minutes.

Mix all ingredients for the glaze. Grill thighs on grill rack until cooked through, brushing with glaze occasionally.
