Healthy and hearty beans in Zanzibar-style coconut sauce — for vegetarians
| boiled red beans 0.5 kg |
| coconut oil 45 g |
| red onion 120 g |
| garlic 3 cloves |
| skinned tomatoes 250 g |
| coconut milk 250 ml |
| water 100 ml |
| tomato paste 30 g |
| TO TASTE: |
| salt |
| sugar |
| paprika |
| red pepper |
| curry |
| dried ground ginger |
Step 1
Fry the chopped garlic and onion in oil until browned.
Step 2
Season with red pepper, paprika, ginger and curry. Fry for a minute to allow the spices to develop their flavor.
Step 3
Add the sugar and tomato paste and stir-fry for another minute.
Step 4
Then add the chopped tomatoes, salt and stew for 5-6 minutes.
Step 5
After a while, add the beans, pour in the coconut milk and water. Stir and simmer for another 15 minutes.
Step 6
Serve the beans with boiled rice and chopped cilantro, if desired. Enjoy!
